So much fun making this! This recipe was super simple because you just buy the seasoning mix from A House Divided here in good ol’ Quinlan, TX and add a few ingredients….
I also made some simple cheese and veggie quesadillas and guacamole to go with it! Ya’ll stop by the store and check out some of their other seasoning mixes:)
Chicken Enchilada Soup
- 1 package Mad Dash Chicken Enchilada Soup Mix
- 1 can of tomato sauce (15 oz.)
- 1 cup cold water
- 4 cups whole milk
- Rotisserie Chicken (Cut up)
- 1 cup shredded cheese for garnish
- Pico for garnish
Directions: Bring all ingredients for cheese and pico to a boil and reduce heat to low. Simmer for 15 minutes and serve. Top with shredded cheese and pico. Tip: You can add corn and black beans and tortilla strips to this as well
Cheese and Veggie Quesadillas
- Large burrito size tortillas
- Mushrooms (sliced)
- 1/2 onion (diced)
- 1/2 yellow bell pepper (diced)
- Shredded Colby Jack cheese
Directions: Heat griddle to medium/high heat. Drizzle oil on griddle. Saute mushrooms, onions, and bell peppers until caramelized, remove and set to side. Place tortilla on griddle, add cheese, the veggies and then more cheese on one half of the tortilla and fold over. Cook for about 2 minutes or until slightly browned and flip. Repeat until you have enough quesadillas. Can be made with chicken, steak, shrimp, or anything else your heart desires.
Pico (I make this and put it in my guacamole)
- 2 tomatoes-diced
- 1/2 onion-diced
- 1/2 bunch of cilantro-chopped finely
- 2 fresh jalapenos
- Juice from 2 limes
- Cavendars seasoning to taste
Directions- Place all ingredients into a bowl and mix together.
- 1/2 of the pico prepared above
- Juice of one lemon
- Garlic salt to tasted
- 4 ripe avocados
Directions- Place avocados and pico in a medium size bowl mash together with whisk(you can also use a masher or fork) until blended well. Add lemon juice and garlic salt. Stir together and serve with quesadillas, chips, fajitas, tacos, burgers, whatever you want!
