Hey there! Long time no see…. I’m kidding. This week was such a fun episode to make and the food was so good. My good friend April and I made a Cajun Filet Oscar. She is a vegetarian so I also gave some tips on how to accommodate your friends that don’t eat meat when you are a meat lover!! She also showed us some really cool Pure Romance products for massaging and skin care. I made a wedge salad and dressed up a store bought cheesecake.
You can watch the video to see the mashed potatoes, wedge salad, and how to dress up the cheesecake but here is the recipe for the Cajun Filet Oscar.
- 2 Filet Mignon (Honestly, you can use any steak you like)
- 1 lb Crawfish Tails
- 1 lb asparagus
- Juice from 3 lemons
- 1 c. Chardonnay (reduced to 1/2 c.)
- 1/2 Heavy Whipping Cream
- 1 stick of butter cubed plus 1/2 stick to cook with
- 1/3 c. thinly diced onion
- Blackened Seasoning
- 1/2 tsp. minced garlic
- Salt and pepper to taste
- 2 tbsp. flour
Lemon Butter Sauce- Place Chardonnay in a sauce pan on high and cook until reduced to half. In a sauce pan, add 1/2 stick of butter until melted. Add onions,garlic, and parsley and cook until onions are translucent. Add flour and stir with a whisk. Add the the heavy cream, wine reduction, and lemon juice and stir. Remove from heat and add the stick of cubed butter and stir until melted. Put to the side!
Asparagus- drizzle with olive oil, cavendars seasoning and a little garlic. Cook on a cookie sheet in the oven on 350 degrees for 15-20 minutes(Make it how you like it)
Crawfish- thaw, drain and squeeze the juice out. Sprinkle with blackening seasoning. Heat Cast Iron Skillet on high and add some butter to it. Add crawfish to pan and cook for about 5 minutes. Move to the side!
Filet- Season both sides of the steak with blackening seasoning. Add more butter to the skillet. For Med Rare- Cook on each side for 5-6 minutes. Cook to your desired temp! Watch out for smoke. When you blacken, smoke happens.
For plating up- mashed potatoes first, top with steak , and then put crawfish on top of steak, add lemon butter sauce, and then place asparagus on top.
