This week my friend Rachel and I made a Snackadium! Just in case you don’t know what that is I will tell you. It’s a stadium made of snacks…..
People make these bad boys for football watch parties for games like the Superbowl so it was fitting for this week with the upcoming game. Although, I used plenty of snacks for the snackadium the recipes for the week were spinach dip and mini crack sandwiches! There is not actual crack in them but once you eat one, you just can’t stop. LOL. Like I said in the video I know nothing about the Superbowl other than, there’s always food at the parties and an awesome half time show!
I built the snackadium out of random things I found around the house. Amazon actually sells some things that you can use too! Watch the video to see what I used and how I put everything together. I hope you enjoy these recipes. They are oh so Yummy!
- Frozen Spinach (Family Size- thawed, drained and squeezed dry)
- 7.5 oz Jar of Marinated Artichoke Hearts (chopped or pureed)
- 1 c. Heavy Cream
- 1 c. Sour Cream
- 1/2 c. Mayo
- 4 oz Cream Cheese
- 1 c. Shredded Mozzarella Cheese
- 1/2 c. Shredded Parmesan Cheese
- 1 Small Onion (Diced)
- 1/2 tsp. Minced Garlic
Heat cast iron skillet to medium high, drizzle a little olive oil into the pan and add onions, cook just until translucent. Turn heat down to medium, add garlic and artichokes. While those are cooking wrap your thawed spinach in paper towels and squeeze as much water out as you can, the spinach. (Don’t skip this step or your dip will be watery.) Add the spinach to the pan and mix in with everything else. Next add the heavy cream and mix well. Add sour cream and cream cheese, stir until melted. Next add the mozzarella and Parmesan cheeses and stir until melted. Top with some extra cheese and transfer to the oven. Bake at 350 for 10-15 minutes and serve!
Mini Crack Sandwiches
- 2 packages of Hawaiian Rolls
- Deli Meat- I used turkey, ham and pepperoni in the video
- 2 different kinds of sliced cheese- I used Munster and Sharp Cheddar
- 1 stick of butter, Melted
- 1 Package of Italian Seasoning (Dressing Mix)
Preheat oven to 350, Cut Hawaiian Rolls in half horizontally. Layer one type of cheese on the bottom half of the rolls. Layer the meats and top with the other type of cheese! Put the top part of the rolls back on. Mix melted butter and Italian seasoning pour on top of the rolls. Bake for 15 minutes or until cheese is melted and tops are browned. Let stand for a few minutes, cut and enjoy! I can never just eat one so good luck. HAHA
